yeah! and i did find some. it was really good with the tomatoes and stuff and warm pasta. i tried a bit of it by itself though, it has been a while since i had any water packed mozzarella, but from what i remember it seems the cow's milk mozzarella had maybe a creamier flavor (on average) as in a little sweeter, buffalo seemed to be just a tad sharper(?) and maybe a little firmer (?) (something slightly different with the texture)...

but then! i got some more last night being as how i wanted to use up the rest of the fresh basil anyhow :) and this time it was creamier in flavor and pretty much no sharpness.

so there's that :)

I have never tasted buffalo mozeralla but will keep my eye open for it ! I dont know where to get it but ,
I made a quick dish this evening of fresh mozzarella from Denmark, Wisconsin , slice tomotoes from Euro Fresh Farms in Arizona, basil from the herb garden on my deck, drizzed with extra virgin olive oli and a balsamic vinegar from Greece. I crushed fresh Mediterrian sea salt and served it up with Japanese rice chips made with seaweed. The crazy thing is that I took the the dish over to my friends house to discuss the movie we just saw, The Help. Bring on the social justice and fried chicken !!

I loved that movie! Did anyone else see this?

Wow, that sounds good MG. I'll have to look for the buffalo mozzarella. Gonna make a caprice salad today. Been cooking all weekend for some reason. Big pot of greens, big pot of putanesca sauce. Have a fresh loaf of calamata olive bread too. Roasted some garlic in olive oil, and helped Katie make the custard for some salted caramel ice cream. Funny thing is we went to the store and these guys were bbqing at the front door. We got the pulled pork sandwiches and ate them.

We have been talking about going and seeing the movie. Just have to muster the gumption to leave the mountain and get to a theater.

for the buffalo mozzarella try a whole foods?

yeah that caprese salad is pretty much the no-cook 'sauce" i dumped in with the hot pasta :) (she's a re-gu-lar lady she is) but anyway, you know, basically the fresh mozzarella, fresh tomato (did i mention those cherokee purple?) and basil, olive oil... and you can tweak it any way you like, only i add the basil leaves somewhat chopped last after you mixed everything else together so's it don't wilt so much (seems to do fine). and the cheese and stuff together is just warmed but not gooey.

sometimes i like those sheets of seaweed that are like paper, roasted with just a TOUCH of oil and a dash of salt,,,haven't had it in a while but sometimes it is just so good to me.

i've not seen the movie though

Forever is a pretty long time.......and a wonderful thing for spiritual beings to have access to. Not to get all Celery about it or anything, I mean really --- this moment, this NOW, is forever.......if we want it to be. And so it goes that FOREVER is NOW :wink: :)

i guess it is funny the way you find out about things sometimes...i mean, i was reading some of the other posts around here and was wondering, wow, what is that supposed to mean? ...and started thinking about smoke signals, then kind of curious about smoke signals in and of themselves, a quick search and i find out about a movie called smoke signals that came out in the 90s...i never heard of it! but i would like to check it out...and thought i would mention it here in case anyone else might be interested

I read the book "Smoke Signals" by Sherman Alexei several years ago... a good read and one author's inside view of growing up/young adulthood as a Native American today in the Pacific Northwest. Also check out his "Lone Ranger and Tonto Fistfight in Heaven" ... I've read everything I could by Alexei - I want more of his (and others') perspectives.
